What is your favorite breakfast food? For me it has to be pancakes!! Next week we’ll be visiting my in-laws in Florida and I am already looking forward to the pancakes my mother-in-law makes. She makes them perfectly with lightly crispy edges that are soooo good.
While I like a good “traditional” pancake, variations are always super fun and a nice break from the normal. Now that fall is here, it’s time to bring on the fall flavors with the grandaddy of them all – pumpkin!!
But, this Pumpkin Butterscotch Pancakes Recipe doesn’t stop at JUST pumpkin, it adds in butterscotch for an extra sweet treat.
These pancakes are a bit denser than your average pancake, but very yummy! I suggest cooking them over medium heat so the pancakes have time to cook through. These make about 10-12 smaller pancakes. If serving to a larger bunch, I suggest doubling the recipe.
Pumpkin Butterscotch Pancakes Recipe
2 cups flour
¼ cup granulated sugar
2 teaspoons baking powder
½ teaspoon pumpkin pie spice
¼ teaspoon cinnamon
1 ¼ cup milk
1 cup pumpkin puree
1 teaspoon pure vanilla extract
½ cup butterscotch chips
½ teaspoon salt
2 tablespoons melted butter
1. In a large bowl mix together flour, sugar, salt, cinnamon, pumpkin spice and baking powder together.
2. In a medium bowl mix together pumpkin puree, milk, vanilla extract, melted butter and eggs together.
3. Gently fold in wet mixture to the dry ingredients.
4. Heat griddle or pan to medium heat. Melt a little butter on pan to grease it, add in a ¼ of pancake batter. Add a few butterscotch chips to the top of each pancake before flipping. Brown each side of the pancakes for 3-4 minutes, flipping once, until cooked through.
