Breakfast is one of my favorite meals of the day. This is why in my house, we have pancakes for lunch and dinner, too. We’ve coined the term “bupper” in our house which basically means that we’re having a breakfast dinner.
Making pancakes in a sheet pan is such a great idea. That way, there’s no waiting and flipping pancakes and having to cook them all one by one.
Cooking the entire pancake in one instance means that we all get to sit down together and enjoy eating! It never fails that if I’m flipping pancakes individually, someone gets finished entirely before others even sit down and start eating.
Blueberry Banana Sheet Pan Pancake Recipe
I also love that this sheet pan blueberry pancake recipe takes just four easy ingredients as well (and two of them are fruit!) The combination of blueberries and bananas adds the perfect natural sweetness.
The other main ingredient is pancake mix. You can use any box of mix, choose to mix up your own pancake batter from scratch, or choose the best of both worlds and use our homemade pancake mix.
You can mix up a big batch of the homemade dry mix and then whenever you’re ready to make this recipe or any other pancakes, you can grab your container of mix and get cooking.

What You Need To Make Sheet Pan Banana Pancakes
You’re going to love how simple this pancake recipe is! Once you gather up the short list of needed ingredients, you’ll be well on your way to eating in no time at all!
- pancake mix – You can also use a homemade pancake mix as well. Buying at the store already made does save on time.
- blueberries – I like to use fresh blueberries but frozen work, too.
- bananas – Bananas are key to adding in the natural sweetness.
- butter – I prefer to use unsalted butter for baking.
Equipment Needed
To make pancakes from a pancake mix, you’ll want to have the following equipment on hand.
- Large rimmed baking pan
- Aluminum foil
How To Make Blueberry Banana Sheet Pan Pancakes
Preheat oven to 425 degrees F. Line a large rimmed sheet pan with aluminum foil and set it aside.
Prepare batter in a large bowl as stated on packaging or as directed on recipe. Set aside.
Melt butter. Brush melted butter onto prepared sheet pan.
Pour pancake batter onto prepared baking sheet – spreading it evenly.
Place half of the blueberries and sliced banana onto the top of the poured batter.
Bake for 5-7 minutes (approximately half way through), and remove from oven to add the second half of blueberries and bananas (the fruit sinks through as it’s baking).
Place pan back in the oven and check it again after baking for 5 additional minutes.
Your baked pancake is done when a toothpick inserted in the center comes out clean.
To get the golden brown color, turn your oven to broil and place the baking pan in the oven for 2 minutes at a time until desired shade is reached. You may need to rotate the pan to get even color.
What toppings go on pancakes?
I’m all about pancake syrup or maple syrup but I know some people like to eat them plain. You can even add a little bit of peanut butter for a boost in protein.
Fresh berries are another awesome pancake topper. Toss fresh berries (strawberries, raspberries, blueberries, any berries) with white sugar and refrigerate for 30 minutes.
This will macerate the berries, which brings out their flavor and creates a delicious thin syrup surrounding the chunky berries.
Whipped cream or a dash of powdered sugar is another excellent way to top them off.
Can you freeze cooked pancakes?
You bet! Just cut up the sheet pan pancake into smaller sections and store them in a freezer bag. This is a simple way to meal prep an easy breakfast for later.
You can microwave your leftover pancake when you’re ready to eat or, better yet, pop in the toaster oven to get a crispier texture.
