These delicious Lemon Ricotta Cookies are light and airy with a hint of lemon zing. They’re perfect for a bridal shower, mother’s day or spring brunch.
These Lemon Ricotta Cookies are perfect for spring (although I love them any time of the year!).
When I think of baked goods that are perfect for spring and summer, I think of lemon flavors! Lemon seems to be so light and fresh and adds a nice bit of zing to baking.
But, I’m not one to like a LOT of lemon in my recipes. If someone offers me a slice of lemon pie, I will quickly pass on it. That’s why I like this Lemon Ricotta Cookies Recipe because it uses the zest of only one lemon, which gives them a nice lemony touch, but doesn’t overpower the cookies.
These cookies are surprisingly easy to bake because there is no rolling and no need to form the cookies. You just drop them by the spoonful onto your cookie sheet. While you’ll want to eat these all the time, this Lemon Ricotta Cookies Recipe makes an especially great option for a dessert cookie or with a cup of tea.
Lemon Ricotta Cookies Recipe
Ingredients:
- 2 cups Sugar
- Zest from one lemon (optional)
- ½ cup Butter, softened
- 2 Eggs
- 15 ounces Ricotta Cheese
- 3 tablespoons Lemon Juice
- 2 ½ cups All Purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
How to make Lemon Ricotta Cookies:
Preheat the oven to 350 degrees. Line a cookie or baking sheet with parchment paper or non-stick spray.
In a large bowl, beat together the butter and sugar until creamy. Add in the lemon zest (if desired) and the eggs. Fold in the ricotta cheese and lemon juice.
Add the flour, baking powder, and salt all at once to the bowl before mixing and then stir the entire mixture until creamy and smooth.
Drop the dough by tablespoonfuls onto the cookie sheet, spread at least 3 inches apart. Bake the cookies for 12 minutes or until the glossy sheen is gone and the cookies are beginning to turn very slightly brown on the bottoms.
Remove the cookies from the oven and let cool. Top with a lemon juice + powdered sugar glaze or a bit of sprinkled powdered sugar.

Hi, Carmen. Since I haven’t tried it with half the sugar I really can’t say how it would turn out. It might work and might not! I think experimenting is the only way to find out for sure. Good luck!
