One of the things I LOVE about spring is the spring produce and that includes berries! There is nothing like a freshly picked strawberry!
It’s fun to take a trip to a pick-your-own strawberry farm, or to a farmer’s market where the berries are still super fresh but someone else has picked them for you.
While I’m happy to have a bowl of fresh strawberries with just some sugar sprinkled on top and maybe a little bit of cream, they are also perfect for turning into delicious recipes.
This Strawberry Pancakes with Cream Cheese Glaze recipe not only tastes good, but is really pretty too! It’s just the thing to make a special menu for a weekend brunch or Mother’s Day.
While the recipe below shows you how to make your pancakes from scratch, you can also choose to start with a pancake mix from a box or that you make yourself.
If you start with pancake mix, just prepare according to regular instructions, adding the sliced strawberries as indicated in our recipe.
Strawberry Pancakes with Cream Cheese Glaze Recipe
INGREDIENTS
Pancakes:
1 1/4 cup Flour
2 tbsp Brown Sugar
2 tsp Baking Powder
1/2 tsp Salt
1 Egg
1 cup Milk
1 tbsp Vanilla
1 tbsp melted Butter
1 1/2 cup sliced Strawberries
Glaze:
4 oz softened Cream Cheese
1 cup Powdered Sugar
1/2 tsp Vanilla
2 tsp Milk
How to Make Strawberry Pancakes:
Combine glaze ingredients and beat until blended.
Transfer to zippered bag or piping bag and refrigerate until redy to use.
Heat a nonstick griddle or skillet over medium heat.
Whisk together the flour, brown sugar, baking powder and salt.
In a small bowl, whisk together the egg, milk and vanilla.
Whisk the wet ingredients into the dry ingredients, then stir in the melted butter.
Pour 1/4 cup batter onto the griddle for each pancake. Then place several strawberry slices in each pancake.
Cook until set and bubbles form in the middle, about 3 minutes.
Flip and cook until golden brown, about 2 minutes.
Drizzle Pancakes with glaze when serving.

If I had my Grandmother’s patience I would indulge and make these. She made us homemade pancakes from scratch all the time. The glaze looks yummy but knowing me I would go overboard and opt for warm syrup. I like more than a drizzle. great recipe for a snow day when time is on my side.
