⭐ Tips and Substitutions⭐
Variations
- Use leftover ham! Thick slices of leftover baked ham work especially well in this recipe.
- Try another vegetable, such as broccoli, Brussels sprouts, asparagus, or carrots, in place of the green beans.
- Switch the potatoes! Baby red potatoes, Yukon Gold potatoes, or fingerling potatoes are all good choices.
- Sliced yellow or red onion can be roasted alongside the potatoes for extra flavor.
- Try a different fruit, like peach halves or rings, which can provide a similar sweet contrast if you don’t have pineapple.
Pro Tips
- Cut the potatoes into evenly sized pieces so they cook at the same rate.
- Give the potatoes a head start before adding the ham and green beans so everything finishes at the right time!
- Pat the pineapple rings and green beans dry before adding them to the pan to reduce excess moisture.
- Use a large sheet pan and spread the ingredients into a single layer for better browning.
- Don’t skip the butter-it adds flavor and helps keep the potatoes and green beans from drying out!
