This is an easy way to use up leftover hard-boiled Easter eggs that tastes great.
Better yet, this recipe also uses up any leftover Easter ham!
These sandwiches can be served for breakfast, lunch OR dinner. They also make a great camping recipe and we have directions for that below.
Cheesy Ham and Egg Sandwich Recipe
Ingredients:
4 hard boiled eggs, chopped
2 slices American cheese, chopped up
¼ small diced ham cubes (or cut up 2 slices deli ham)
1 heaping tablespoon mayonnaise or Miracle Whip
Salt & pepper
How to Make Leftover Hard Boiled Egg Sandwiches:
You need to start with hard-boiled eggs with the shells removed. I recommend using this easy way to peel hard boiled eggs.
Mix all ingredients together and then spread inside buns (we used leftover dinner rolls from Easter also).
Wrap in foil and heat in the oven at 400 degrees until warmed through – appx 10-15 minutes.
Convert to a camping recipe:
To make cheesy ham and egg sandwiches at your campsite, wrap the sandwiches in foil and cook on rack on top of your campfire or placed around the edge of your fire.
