3. Stir and cook the onions until they become translucent or they turn a light brown color.
4. Add salt and pepper to taste.
5. Drain the onions over a plate with a paper towel on it and set aside.
Ingredients for jalapeño cream cheese spread:
1 8-oz package of cream cheese, at room temperature
½ cup of mayonnaise
½ teaspoon of garlic powder
1 jalapeño, seeded and finely minced
Salt to taste
How to make the jalapeño cream cheese spread:
1. Mix the cream cheese with a fork or spoon until smooth.
2. Stir in the mayonnaise, jalapeño and garlic powder.
3. Add salt to taste and let sit for up to a half hour before serving to allow the garlic powder to dissolve.
Ingredients for Jalapeño Popper Burgers:
1 pound of ground beef (I used 80% lean/20% fat)
½ white onion, finely diced
1 jalapeño, seeded and finely diced
3 garlic cloves, finely diced
½ cup of shredded cheddar and Colby jack cheese, mixed
1 teaspoon of salt
1 teaspoon of cumin powder
1 teaspoon of cayenne pepper powder
½ teaspoon of black pepper
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 tablespoon of olive oil
6 hamburger buns
8-10 pieces of iceberg lettuce
1 large tomato cut into thin slices
Ketchup, mustard and any other condiments of choice
How to make the yummy Jalapeño Popper Hamburgers:
1. Mix together the salt, cumin powder, cayenne pepper powder, black pepper, garlic powder and onion powder in a small bowl and sprinkle the spice mix into the ground beef.
2. Mix the spices into the beef until completely combined.
3. In a separate bowl, mix together the diced onion, cheese, garlic and jalapeño and set aside.
4. Take a handful of the beef and form it into a thin patty and two times the size of the burger buns that you will be using, set it down and add a spoonful of the cheese mix to the center of the patty. Form another patty and place it on top of the other patty and seal the outer edges. Remove any excess meat and repeat the process until you have used all of the beef.
5. Heat a large frying pan over medium heat and add the olive oil to the pan.
6. Cook the patties on each side until they reach your desired doneness. (I cooked mine a little over as I like a nice char on mine.)
7. Drain the excess oil from the burgers over a plate with a paper towel on it.
8. To assemble the burgers, spread the cream cheese spread over the burger bun, then add a slice of tomato, a piece or two of lettuce, the burger patty, condiments, caramelized onions and the top bun.
9. Serve burgers immediately and enjoy!
