Ingredients for caramelized onions:

  • 1 large white onion
  • 4 tablespoons of salted butter
  • Salt and pepper to taste

Ingredients for jalapeño cream cheese spread:

  • 1 8- oz package of cream cheese at room temperature
  • ½ cup of mayonnaise
  • ½ teaspoon of garlic powder
  • 1 jalapeño seeded and finely minced
  • Salt to taste

Ingredients for jalapeño popper hamburgers:

  • 1 pound of ground beef I used 80% lean/20% fat
  • ½ white onion finely diced
  • 1 jalapeño seeded and finely diced
  • 3 garlic cloves finely diced
  • ½ cup of shredded cheddar and Colby jack cheese mixed
  • 1 teaspoon of salt
  • 1 teaspoon of cumin powder
  • 1 teaspoon of cayenne pepper powder
  • ½ teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 tablespoon of olive oil
  • 6 hamburger buns
  • 8-10 pieces of iceberg lettuce
  • 1 large tomato cut into thin slices
  • Ketchup mustard and any other condiments of choice

Instructions

Caramelize Onions

  • Cut the onion in half from end to end. Cut off the ends and slice them into thin pieces.
  • Melt the butter in a small frying pan over medium heat and add the sliced onions.
  • Stir and cook the onions until they become translucent or they turn a light brown color.
  • Add salt and pepper to taste.
  • Drain the onions over a plate with a paper towel on it and set aside.

Jalapeño Cream Cheese Spread

  • Mix the cream cheese with a fork or spoon until smooth.
  • Stir in the mayonnaise, jalapeño and garlic powder.
  • Add salt to taste and let sit for up to a half hour before serving to allow the garlic powder to dissolve.

Burgers

  • Mix together the salt, cumin powder, cayenne pepper powder, black pepper, garlic powder and onion powder in a small bowl.
  • Sprinkle the spice mix into the ground beef and mix until completely combined.
  • In a separate bowl, mix together the diced onion, cheese, garlic and jalapeño and set aside.
  • Take a handful of the beef and form it into a thin patty and two times the size of the burger buns that you will be using, set it down and add a spoonful of the cheese mix to the center of the patty. Form another patty and place it on top and seal the outer edges. Remove any excess meat.
  • Repeat the process until you have used all of the beef.
  • Heat a large frying pan over medium heat and add the olive oil to the pan.
  • Cook the patties on each side until they reach your desired doneness. (I cook mine a little over as I like a nice char.)
  • Drain the excess oil from the burgers over a plate with a paper towel on it.
  • To assemble the burgers, spread the cream cheese spread over the burger bun, then add a slice of tomato, a piece or two of lettuce, the burger patty, condiments, caramelized onions and the top bun.
