⭐ Why You’ll Love this Recipe ⭐
Delicious Flavor Combination – Pecan Date Spice cookies bring together the perfect trio-sweet, chewy dates, buttery pecans, and warm spices like cinnamon, ginger, and cloves. The dates add natural sweetness and a soft texture that pairs beautifully with the crunchy pecans.
Perfect for Any Occasion – Need a holiday cookie that'll stand out? Done. Something to add to a Christmas dessert spread? Here you go. These pecan date spice cookies are versatile enough for any celebration, whether it's Christmas, a cozy family get-together, or even a bake sale.
Easy to Make – Don't let their rich, complex flavor fool you. These cookies are surprisingly simple to whip up! Just mix up the dough, roll it into logs, and chill it in the fridge. When you're ready to bake, slice and pop them in the oven.

🥣 How to Make

STEP 1: In a big mixing bowl, stir the flour and seasonings together with a whisk. Toss in the dates and pecans, making sure the fruit gets coated with the flour mixture. If the dates stick together, use your hands to separate them.

STEP 2: In a smaller bowl or measuring cup, mix the milk and baking soda. Set it aside for later.

STEP 3: In another bowl, beat the butter and sugar until the mixture is light and fluffy. Now pour the wet ingredients over the dates and pecans. Stir everything together until it's well mixed.

STEP 4: Divide the dough into three equal parts. Place each portion on a sheet of waxed paper. Roll them up tightly and wrap them well. Pop them in the fridge for at least 3 hours or, even better, overnight.

STEP 5: When it's time to bake, preheat your oven to 375°F. Slice the dough into cookies and place them on the baking sheets.

STEP 6: Bake for 10 minutes or until the edges are golden brown. Let the cookies sit on the baking sheet for 5 minutes before transferring them to a cooling rack.
⭐ Pro Tips ⭐
- Toast the pecans for extra flavor! If you've never toasted your nuts before baking, you're missing out. Toasting pecans brings out their natural sweetness and adds depth to their flavor.
- Use soft, fresh dates for the best texture. Soft dates blend into the dough better and create those gooey pockets of sweetness everyone loves. If you're using older dates that feel a bit dry, don't worry. You can soften them up! Just soak them in warm water for about 10 minutes, then pat them dry before chopping.
- Roll dough logs evenly for consistent slices. When shaping your dough into logs, take a few extra moments to ensure they're even. This helps your cookies bake uniformly, which means no overcooked edges or under-baked centers.
- Chill the dough properly! Don't skip the chilling step! It's tempting to rush to the baking part, but chilling the dough does so much for your cookies. It solidifies the fats, prevents spreading, and allows the spices to fully infuse into the dough. If you're short on time, aim for at least three hours, though overnight is best.
