Celebrate the holiday season with these Chocolate Pecan Slice and Bake Cookies made with Grandma’s recipe!
Food is one of the very best parts of the holiday season and what makes it even better are well-loved family recipes that are passed down from one generation to another.
While growing up, I always knew that when we got to my Grandma’s house on Christmas Day there would be lots of different cookies that she had baked.
One year, as a surprise for me and all my cousins, my mom took all of grandma’s handwritten recipes, copied them and created a recipe book for each of us.
It’s such a precious keepsake to have these cookie recipes saved in Grandma’s own handwriting.
The very last recipe in the book is one that Grandma called Bittersweet Chocolate Cookies. In recreating Grandma’s recipe this year, I’m making a slight twist on it by reducing the amount of sugar in it and renaming it as Chocolate Pecan Slice Cookies.
In this update of Grandma’s recipe, the cookies get their sweetness from Sweet’N Low®. You probably already use Sweet’N Low® zero-calorie sweetener to sweeten your coffee, but did you know you can also use the Sweet’N Low® packets and Sweet’N Low® 8oz bulk box to help reduce sugar and calories in your baking?
Chocolate Pecan Slice and Bake Cookies
1 1/4 cup butter, softened
2 Tablespoons Sugar
1 teaspoon Sweet’N Low® 8oz Bulk Box or 5 Sweet’N Low® packets (OR leave out and change sugar to 1/4 cup)
1 egg
1 teaspoon vanilla
2 1/2 cups flour, sifted
1/2 cup cocoa powder
1 cup finely chopped pecans
1/2 cup chocolate chips, melted
How to make Chocolate Pecan Slice and Bake Cookies:
Heat oven to 375°F.
Beat butter, sugar, Sweet’N Low®, egg and vanilla until light and fluffy.
Add flour and cocoa. Mix well.
Shape dough into two 9-inch rolls. Roll in chopped pecans.
Wrap in plastic wrap and chill 4 hours or until firm.
Cut each roll into 1/3 inch thick slices and place on ungreased cookie sheet
Bake 8 to 10 minutes.
Drizzle melted chocolate on tops of cooled cookies. (I put the melted chocolate in a zip-top baggie and cut off the corner to make this easier.)
