Chocolate Pecan Slice and Bake Cookies

These easy-to-make slice and bake cookies are just like Grandma used to make. They feature rich chocolate cookies rolled in chopped pecans with a bit of icing drizzle.

Ingredients

  • 1 ¼ cup butter softened
  • ¼ cup Sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 ½ cups flour sifted
  • ½ cup cocoa powder
  • 1 cup finely chopped pecans
  • ½ cup chocolate chips melted

Instructions

  • Heat oven to 375°F. 
  • Beat butter, sugar, egg and vanilla until light and fluffy.
  • Add flour and cocoa. Mix well.
  • Shape dough into two 9-inch rolls. Roll in chopped pecans.
  • Wrap in plastic wrap and chill 4 hours or until firm.
  • Cut each roll into ⅓ inch thick slices and place on ungreased cookie sheet
  • Bake 8 to 10 minutes.
  • Drizzle melted chocolate on tops of cooled cookies. (I put the melted chocolate in a zip-top baggie and cut off the corner to make this easier.)
