White Castle has been serving up its famous square sliders since 1921, and fans love them for their unmistakable oniony, beefy bite. The secret? Thin patties with vent holes that allow steam from the onions to cook them through that locks in both tenderness and flavor.

STEP TWO: Flatten the beef between 2 sheets of parchment paper into a rectangle evenly ¼" thick.

STEP THREE: Cut the beef into 12 patties and use a wooden spoon handle (or metal straw) perforate vent holes into each patty.
