This 4th of July Ice Cream Pie is the perfect red, white, and blue dessert! It’s a simple no-bake treat that combines a creamy homemade vanilla ice cream filling with fresh strawberries and blueberries in a buttery graham cracker crust. It’s cool, festive, and exactly the kind of dessert everyone loves on a hot summer day!

This no-bake dessert is perfect for a CHILL 4th of July celebration, just like my favorite Patriotic Snow Cones Recipe! The homemade ice cream filling comes together in minutes and freezes into a creamy, scoop-shop-style texture thanks to the combination of whipped cream and sweetened condensed milk.
The fresh strawberries and blueberries not only add patriotic color, but also provide bursts of juicy flavor throughout every slice. Since the berries are layered throughout the pie, you get fruit in every bite rather than just on top. Best of all, this dessert can be made a full day ahead, making party planning easier and less stressful.

🥣 How to Make

STEP ONE: Place heavy whipping cream in a stand mixer with the whisk attachment. Add vanilla extract. This can also be done with a hand blender with a whisk attachment, but it will take much longer. Blend for 4 minutes on low speed, then increase to 6 as it thickens. Once it resembles whipped topping, then it’s ready.

STEP TWO: Fold in the can of sweetened condensed milk. Place some blueberries and sliced strawberries into the pie crust. Pour some of the ice cream mixture in. Add more berries and more ice cream!

STEP THREE: Top the ice cream pie with strawberries and blueberries. Wash the pie crust lid, flip it, and place it on the pie. Press down the metal edging. Freeze pie overnight. Once frozen overnight, cut with a warm knife and serve!

- Make sure the whipped cream reaches stiff peaks before folding in the condensed milk. Fold gently to maintain the light and fluffy texture!
- Dry the berries well after washing to prevent ice crystals from forming.
