I love to cook, especially during the holidays. Between family get togethers, my husband’s office party and my daughter’s school functions, I have a lot of folks to cook for. Over the years, I have learned to take the stress out of my holiday cooking by finding home-cooked recipes that don’t take hours out of my day to prepare.
This way my family enjoys a delicious meal and I get to hang on to my sanity! One of my most used small appliances is my slow cooker. I love to fill it, set it and forget it. While our food is cooking, I can focus my time on other tasks at hand like baking cookies for my daughter’s Robotics team and my husband’s office party.

One of my favorite additions to many of my holiday recipes are cranberries. I could eat them every day.
I put them in cookies, my Christmas bread, and my Cranberry Orange Walnut Relish. It’s easy to make and has a perfect balance between tart and sweet.
If you end up with extra cranberries, you can make this Eggnog Panna Cotta for dessert and use them as topping!
Slow Cooker Pork Loin With Cranberry Walnut Relish
Ingredients:
1 Smithfield Marinated Fresh Pork Loin Filet
1 cup vegetable or chicken stock
One 12-ounce package fresh cranberries
1 orange
1 cup sugar
2 teaspoons water
1/2 cup walnuts, chopped
Instructions:
Add vegetable or chicken stock and Smithfield Marinated Fresh Pork Loin Filet to slow cooker. Cook on high for 3 hours. Turn down to low for one hour.
When slow cooker has 30 minutes left, begin making the Cranberry Walnut Relish.
In a medium saucepan, add cranberries, walnuts, sugar, zest and juice of one orange, and water. Cook over low heat for about 10 minutes, or until cranberries are soft. Cool before serving.
The Cranberry Orange Walnut Relish pairs beautifully with our Smithfield Marinated Applewood Smoked Bacon Pork Loin Filet. You can serve the relish on top of your Smithfield Marinated Pork, like I do, or on the side. Either way, you are in for a real treat! Enjoy!
