Cupcakes are sooo good, right? And since everyone in your house is probably Encanto crazy and obsessed, it just makes sense to make these fun Bruno-themed cupcakes.
There are so many reasons that “We Don’t Talk About Bruno” has become such a huge hit! First off, practically everything Lin Manuel Miranda writes is gold. Next up is that it’s just SUCH A GOOD SONG – you just can’t keep it out of your head. And thirdly, it’s also because the character Bruno is just so interesting!
In Encanto, Bruno is Mirabel’s uncle who was gifted with the ability to see the future. His honest, usually troubling predictions are not what the rest of the family wanted to hear, so he disappeared long ago. He became the uncle no one talks about.
Bruno is voiced by the amazing John Leguizamo lends his voice to Bruno. He says, “Bruno is so compelling because he is that guy that never quite fits in. He’s an outsider, but he also understands the world better because he’s always wanted to belong to it.”

Ingredients needed for Encanto Bruno Cupcakes
Cupcakes:
- prepared cupcakes, chocolate or flavor of your choosing
- container of vanilla frosting (Cream cheese flavor is fine too)
- Green food coloring (12 drops for frosting, six drops for the candy glass.)
- Brown sugar, optional, enough to sprinkle on your cupcakes
Candy glass:
- sugar
- water
- light corn syrup
- cream of tartar
How To Make Bruno Cupcakes
In a medium size saucepan, add your sugar, water, light corn syrup, green food coloring, and cream of tartar. Mix using a whisk.
Bring your ingredients to a boil while making sure to whisk continually.
Continue to whisk and boil until you reach the temperature of 275°.
Once it has reached optimal temperature, pour your contacts onto a small to medium size cookie sheet. You will want it to be the same height and thinness, so using the back of a spoon or a heat safe spatula, level out your candy.
Allow the candy to cool on your cookie sheet for at least two hours.
While your candy is cooling, prepare your frosting. Add 12 drops of green food coloring to your frosting. You can add more or less depending on your preference. Mix well together. Add to your piping bag your piping tip, and then your frosting. Cut the tip of your piping bag and allow the tip to fall into the hole, and push your frosting down.
Pipe your cupcakes.
If you choose to add your brown sugar to represent the sand, sprinkle that on now.
Once the two hours are up, and your glass candy is ready, break the glass using the back of a spoon. Continue to break until you reached your desired size for each shard of glass.
Stick 3 to 5 pieces of glass to top your cupcake.

Tips for Making Encanto Cupcakes
Make sure that you use a candy thermometer so that you can get the exact temperature needed for the candy “glass.” Guessing won’t work, and it will cause this part of the decorations to not be set up properly.
If you don’t want to add the brown sugar to the top of the cupcakes, just leave it off. It’s a fun look, but it might not be a texture or additional sweetness that everyone wants.

How to store cupcakes
To keep the cupcakes as fresh as possible for as long as possible, store them in an airtight container. You don’t have to keep them in the fridge but you can if you want.
Can I freeze cupcakes for later?
You can, but I recommend freezing them without frosting and then frosting them after you unthaw them.

Encanto Bruno Cupcakes
Ingredients
Cupcakes:
- 12 cupcakes prepared chocolate or flavor of your choosing
- 16 oz container of vanilla frosting Cream cheese flavor is fine too
- Green food coloring 12 drops for frosting, six drops for the candy glass.
- Brown sugar optional, enough to sprinkle on your cupcakes. 1 1/2 cups to 1 cup
Candy glass:
- 1 cup sugar
- 6 TBSP water
- 5 1/2 TBSP light corn syrup
- Pinch of cream of tartar
Instructions
- In a medium size saucepan, add your sugar, water, light corn syrup, green food coloring, and cream of tartar. Mix using a whisk.
- Bring your ingredients to a boil while making sure to whisk continually.
- Continue to whisk and boil until you reach the temperature of 275°.
