Doritos Casserole with Chicken
Since this simple Doritos casserole recipe is just a fun and unique spin on taco casserole, you’ll find that it’s very similar in the creation process.
I like to make this for Taco Tuesday or as a great way to get the kids excited and hungry for dinner.
Once they hear that there are Doritos in this recipe, there is no issue having them counting down the time till it’s ready.
To cut down the cooking and prep time, I like to use already cooked chicken, rotisserie chicken or leftover chicken and just add it in!
To save time with recipes like this, I often will make up a batch of cooked chicken to store in the freezer so it’s always ready for an easy meal.
The kids can also help to make this fun Mexican chicken casserole recipe with doritos by being the ones that crunch up the chips! This will give them the confidence that they can make food while also having them help out in the kitchen as well.
I’d be certain to have some extra Doritos on hand because you know that some of those chips are going to end up in their mouths. (and possibly yours, too!)
And, speaking of Doritos, we used Nacho Cheese Doritos, but feel free to try Cool Ranch Doritos or any other flavor that you love.
(One more option I’ll throw out for you – it tastes great with homemade taco seasoning too!)

What flavor of Dorito works best?
For this recipe, we use the classic Nacho Cheese Dorito flavor. It’s the best, in my opinion, and pretty much everyone in the family tends to agree as well.
If you want to try out Cool Ranch, Spicy Nacho or another flavor of Dorito, go for it! Just let me know how it turns out and I just might be trying it, too.
How to store leftover Doritos casserole
Truth be told, this casserole is best when baked and eaten fresh. While you can reheat and enjoy the next day, just know that the Dorito chips are going to lose their crunch and become soggy overnight.
A simple hack to get around that is to save some Doritos and add them fresh to the top the next day. This will give you even more of that flavor and give you that crunch, too.
Another option is to microwave the casserole and then set under the broiler for a few seconds to crisp up, but the timing is super tricky and you’re likely to end up with burned chips on top.
Can you make this casserole spicy?
You bet. There are a couple of things that you can do to add some heat to your casserole recipe. The first is that you can add in a spicy taco seasoning in place of regular.
The other easy option is to add hot sauce or freshly diced jalapenos to your own serving portion. This way you can have your heat and everyone else can enjoy it just the way it is.
One last way to make the casserole extra spicy is by using Flamin’ Hot Doritos in place of regular nacho cheese.
Is Doritos Pie the same as Dorito Casserole?
The basic difference between a Dorito Pie and a casserole is that the pie has some sort of crust. The easiest way to turn this casserole into a pie by lining your baking dish with unrolled canned crescent roll dough. Just press the seams together before adding the rest of the ingredients to the dish and baking.
