🔁 Variations
Different Meats: Introduce Alternatives Like Chicken or Turkey
- Chicken: Swap out beef for chicken strips for a lighter option. It cooks quickly, staying juicy and tender inside your egg rolls.
- Turkey: Opt for turkey for a lean and slightly gamey alternative. Its subtle flavor pairs wonderfully with traditional cheesesteak spices.
Cheese Variations: Explore Other Cheese Options Like Provolone or Pepper Jack
- Provolone: Adds a creamy, slightly nutty taste that blends beautifully with tender meat and sautéed veggies.
- Pepper Jack: For those who love a kick, this spicy cheese brings a zing to every bite, perfectly complementing the savory filling.
Adding Vegetables
- Bell Peppers: We used green, but you can use red, orange or yellow as they all add a sweet crunch and vibrant color to your egg rolls.
- Garlic: Toss in some crushed garlic cloves to the last 30 seconds of your pepper and onion sauté for an extra flavor boost.
- Mushrooms: If you love the taste of mushrooms (I’ll pass!) you can cook them up with the pepper and onions.
🥣 How to Make

STEP 1: Heat up some oil in a saucepan over medium-high. Toss in the bell pepper and onions and let them sizzle for 3 to 5 minutes until they soften up nicely.

STEP 2: Throw in the minced garlic, Worcestershire sauce, steak, along with a pinch of salt and pepper. Let it cook until the steak is browned. Drain the juices for some tasty au jus and set it aside.

STEP 3: Place the egg roll wrapper in a diamond shape. Spoon 2 to 3 heaps of the meat mixture in the middle, then sprinkle 2 tablespoons of shredded cheese on top.

STEP 4: Dab a bit of water along the edges of the wrapper with a sponge brush. Fold the left and right corners to the center, then bring the bottom corner up and roll it tight, squeezing out any air. Wet the exposed corner to seal it.

STEP 5: Lightly coat the air fryer basket with oil and place the egg rolls inside. Give them a quick spray of oil too. Cook at 380°F for 8 minutes, flipping them halfway until they’re crispy and golden.

STEP 6: Let them cool for about 5 to 10 minutes before you dive in. Enjoy!

⭐ Pro Tips ⭐
Choosing the Right Meat: Ribeye: Known for its marbling, ribeye brings a rich, buttery flavor that melts in your mouth. Sirloin: Slightly leaner, sirloin offers a robust flavor without being overly greasy.
Both have their own pros -go with ribeye for indulgence or sirloin for a balanced bite. Whatever you choose, slice it thin for even cooking and that classic Philly feel.
Avoiding Soggy Egg Rolls: After cooking the filling, let it sit in a colander to drain off any extra juices. This step ensures you're not wrapping up a waterlogged filling. Also, use a HOT Air Fryer. Starting with a hot fryer helps seal the wrappers quickly, preventing too much steam from building up inside.
Don't Overstuff: It can be tempting to load them up with all that delicious filling, but less is more here.

📝 Recipe FAQs
Absolutely, prepping ahead can save you time. You can prepare the eggroll filling a day or two in advance. Just store it in an airtight container in the fridge. When you’re ready to serve, simply wrap the filling in the eggroll wrappers. For cooked eggrolls, store them in the refrigerator and reheat in the air fryer for a few minutes to restore their crispy texture.
Feel free to get creative! While steak is traditional, chicken or turkey can offer a lighter alternative. For a vegetarian option, tofu or mushrooms provide a satisfying texture and flavor. Marinating alternative proteins in Worcestershire sauce or soy sauce can add depth, making them just as savory and delicious as the classic version.
The choice of cheese can transform your eggrolls. Provolone delivers that iconic cheesesteak taste, but you can also explore other options. Cheddar adds sharpness, while mozzarella provides a milky creaminess. If you're feeling adventurous, why not try a spicy pepper jack for an extra kick? The key is to use a cheese that melts well for that ooey-gooey center.
Yes, freezing is a great way to keep these eggrolls on hand for future cravings. To freeze, assemble the eggrolls but do not cook them. Lay them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe container or bag. When you’re ready to eat, air fry them directly from frozen, adding a few extra minutes to the cooking time for thorough heating.
