Turkey and tomatoes combine with delicious cheese to make a delicious ooey, gooey Turkey Tomato Grilled Cheese Sandwich.
This is a simple sandwich recipe, but it’s nice and quick to make for lunch or an easy dinner. The addition of the tomato gives you some veggies (or are tomatoes a fruit?) even if you’re just grabbing a sandwich. I also like to add a few spinach leaves if I have them available.
You can choose any type of bread to make your sandwich. I love it on my easy no-knead bread. It’s a hearty slice that holds up well to the weight of the turkey and tomato. It’s also delicious on sourdough or multi-grain bread.
Cheese is another area where you have a choice to make. I use shredded colby jack cheese basically because I LOVE colby jack cheese, but you can go with a cheddar cheese or even mozzarella too.
Turkey Tomato Grilled Cheese Sandwich Recipe
Ingredients to make 2 sandwiches:
4 slices bread
4 oz sliced turkey
8 grape tomatoes – halved (or use tomato slices)
Optional: Spinach leaves
4 oz shredded colby jack cheese
salt and pepper
1 Tbsp butter
How to Make Turkey Tomato Grilled Cheese:
Top 1 slice of bread with half the turkey, half the tomatoes and half the cheese. Sprinkle with salt and pepper.
Top with another slice of bread. Repeat to assemble the second sandwich.
Melt butter over medium heat in a skillet large enough to fit both sandwiches. Add sandwiches and cover with a lid to help melt the cheese.
Once bottom is browned, flip the sandwiches. Do NOT cover again or the sandwiches won’t be crispy on that first side.
Cook until second side is browned. Enjoy!
