This is a simple recipe, but it is nice and quick to make for lunch and the added tomato gives you some veggies (or are tomatoes a fruit?) even if you're just grabbing a sandwich. I also like to add a few spinach leaves if I have them available.
Turkey Tomato Grilled Cheese Sandwich Recipe
To make 2 sandwiches:
4 slices bread
4 oz sliced turkey
8 grape tomatoes – halved (or use tomato slices)
Optional: Spinach leaves
4 oz shredded colby jack cheese
salt and pepper
1 Tbsp butter
How to Make Turkey Tomato Grille Cheese:
Top 1 slice of bread with half the turkey, half the tomatoes and half the cheese. Sprinkle with salt and pepper. Top with another slice of bread. Repeat to assemble the second sandwich.
Melt butter over medium heat in a skillet large enough to fit both sandwiches. Add sandwiches and cover with a lid to help melt the cheese. Once bottom is browned, flip the sandwiches. Do NOT cover again or the sandwiches won't be crispy on that first side. Cook until second side is browned. Enjoy!
