This Springtime Filled Cake Cookies recipe is perfect for Easter. Fill them with beautiful pastel colors to brighten up your spring!
It’s officially spring, whether or not you still have a bunch of snow in the yard like we do. To add to the happy spirit of the season we are sharing this Springtime Filled Cake Cookies Recipe.
Even though the results are super cute and professional looking, they are easy to make, especially since you start with a store-bought cake mix for the cookies themselves.
I think this homemade frosting tastes much better than the frosting from a can, plus it is easy to make.
BUT if you’re in a hurry and don’t want to make your own, feel free to substitute a can of vanilla frosting for the filling – just tint it whatever color you would like first.
You can choose to fill them with any cute pastel colors you would like – choose to make all different colors or stick with one color to match with the theme of your party – or just a favorite color.
To add more “bling” to the cookies, you can also roll the edges in sprinkles, but I personally like them just the way they are.
Springtime Filled Cake Cookies Recipe for Easter
SPRING CAKE MIX COOKIES INGREDIENTS
1 box Cake Mix
2 Eggs
1/2 cup Vegetable Oil
1/2 cup softened Butter
2 tbsp Milk
2 cup Powdered Sugar
Food Coloring
How to Make Cake Mix Cookies for Spring:
Preheat oven to 350.
Line a baking sheet with parchment paper.
Combine cake mix, eggs and oil until mixture forms a dough.
Form dough into 1″ balls and place on prepared sheet gently pressing down to flatten to about 2″ round.
Bake for about 8 minutes until edges just start to brown.
Transfer to wire racks to cool.
Cream butter in a medium bowl
Slowly add in the powdered sugar, and milk as needed, until everything is incorporated and frosting is right consistency.
Divide into equal size batches of the number of colors desired and add several drops of color to each.
Transfer icing to piping bag or to a zippered bag and clip corner.
Pipe icing onto a cookie starting around edge and filling to middle. Top with another cookie, gently pressing together.
