This super yummy Roasted Garlic Mashed Potato Recipe contains two of my very favorite foods – potatoes and garlic!

The addition of yummy butter and cream sure doesn’t hurt either.
These potatoes make a perfect accompaniment to roasts, turkey, chicken dishes and more. If you have leftovers, they make amazing potato pancakes.
You’ll end up with some extra roasted garlic after making this recipe.
That extra garlic is perfect for tossing into other meat or veggie dishes. It’s also absolutely delicious just spread onto a piece of bread or a roll.
Roasted Garlic Mashed Potato Recipe
INGREDIENTS (Serves 6-7 people)
4 lbs Russet Potatoes
2 sticks (8 oz) room temperature Butter
1 cup room temperature Heavy Cream
1 head Garlic
1 tbsp Virgin Olive Oil
Salt (to taste)
Fresh Ground Pepper (to taste)

How to make roasted garlic mashed potatoes:
Cut end off end of head of garlic, place in foil and drizzle with olive oil.
Close up foil and bake in 400 degree oven for 30 minutes.
Allow to cool.
Peel and dice potatoes into 1/2″ cubes.
Cover in water in large pan and boil 20 – 30 minutes, until soft.
Drain potatoes.
Add 4 cloves of the roasted garlic by popping out of their skins.
Mash potatoes with a potato masher or heavy spoon until well mashed.
Add butter.
Use hand mixer to smooth out any remaining lumps.
Slowly add cream until potatoes reach appropriate consistency.
Season with salt and pepper to taste.

Wow, I hadn’t thought of roasted garlic to the mashed potatoes – I have on occasion added cream and lot of butter – a good time to go all out on a holiday – everyone will love your mashed potatoes and not realize what is in them wink wink!!! I love this, and now I want to include roasted garlic!!!
