Do you have any foods that you associate with special occasions, but they are actually perfect for everyday meals? For me, one of those is Barber Foods Stuffed Chicken Breasts. My family has a Christmas Eve tradition where we prepare a “Christmas Eve Feast” that is made up of the favorite foods of everyone in our family. For my little sister, one of her favorites has long been Barber Foods Chicken Kiev – – so that has been on our menu for years! But now Barber Foods has changed things up a bit. They have a new and improved recipe, along with spiffy new packaging to boot!
I headed to my local Walmart store to pick up Barber Foods Stuffed Chicken Breasts in the frozen food aisle. They were easy to find and I had several varieties to choose from including Cordon Bleu, Broccoli Cheese, Chicken Kiev.
My hubby is a big fan of Cordon Bleu, so I decided to cook that one up first and, to complement it, created this delicious Pineapple Pistachio Lettuce Salad recipe. It’s a nice complement to the chicken, ham and cheese in the stuffed Barber Chicken.
Pineapple Pistachio Lettuce Salad Recipe
Ingredients:
1/2 cup chopped pineapple
3 Tbsp chopped pistachios
1 green onion, sliced
2 slices bacon, cooked and crumbled
5 ounces spring mix lettuce
2 Tbsp pineapple juice
1 1/2 Tbsp red wine vinegar
2 Tbsp olive oil
salt and pepper to taste
How to Make Lettuce Salad with Pistachio and Pineapple:
Place pineapple juice, vinegar, oil, salt and pepper in a small bowl and whisk well. Combine all other ingredients in salad bowl. Pour dressing over lettuce mixture, toss well, and serve.
Preparing the Barber Chicken is easy to do. Just heat the oven (don’t use the microwave), place the chicken on a metal baking sheet, and cook until the internal temperature reaches a minimum of 165 degrees.
I enjoyed the taste of the new Barber Foods recipe and am happy to have my freezer newly stuffed with Barber Foods Stuffed Chicken Breasts. The next time I am stumped as to what to make for dinner, I can just prepare it in the oven, whip up a salad, and have dinner ready to go on the table.

Ingredients

Wild rice is one of my favorite sides with stuffed chicken breasts. Your pineapple pistachio salad sounds scrumptious, too. It’s fun to make up a side dish when the main course just needs popped into the oven till it’s done.
