This Perfect Fluffy Scrambled Eggs Recipe used only two ingredients and is super quick and easy to make.
Sometimes the most simple dishes can be the most delicious. Case in point – the PERFECT fluffy scrambled eggs recipe with just two ingredients: Eggs and I Can’t Believe It’s Not Butter. Not only is this recipe easy, but it is SO good! I had originally planned to add some cheese and make an egg sandwich, but the eggs were so good “as is” that I didn't want to cover up the flavor with anything extra.
Perfect Fluffy Scrambled Eggs Recipe
2 Tbsp. I Can't Believe It's Not Butter!® Spread
4 slices whole wheat bread, toasted if desired
- Beat I Can't Believe It's Not Butter!® Spread and eggs with fork or wire whisk in medium bowl about 2 minutes (small lumps of Spread will remain in egg mixture).
- Heat nonstick skillet over medium heat. Add egg mixture to skillet and cook over low heat, stirring frequently, until eggs are thoroughly cooked, about 2 minutes.
- Optional: Sprinkle with salt and pepper and/or top with fresh herbs. (I used chives.)
- Tip: For more delicious buttery flavor, melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in skillet before cooking.
