Chicken Parmesan is one of my husband’s very favorite dishes. He always jokes that he gained so much weight after we started going out because I made such good chicken parm sandwiches.
This Mini Chicken Parmesan Cups Recipe is a fun twist on the classic and can even be made with leftover pasta and sauce.
Mini Chicken Parmesan Cups Recipe
Ingredients:
2 cups dry pasta (I used ziti)
2 cups pasta sauce
12 chicken nuggets
1/2 cup shredded mozzarella cheese
How to Make Mini Chicken Parmesan Cups:
Cook pasta according to package directions. Cook nuggets according to package directions.
Reduce oven temperature to 350 degrees. Line a muffin tin with foil liners.
Mix sauce and pasta together.
Fill each tin nearly to the top with pasta mixture.
Set one nugget on each cup. Top with a spoonful of sauce and a sprinkling of cheese.
Bake 15-20 minutes or until cheese is melted.
