This delicious and easy-to-make Italian Salad Roll-Ups recipe combines Romaine, Provolone, Roasted Peppers & Salami into the perfect hand-held salad. Serve with balsamic dressing to dip!
One of the very best parts of the holiday season is getting together to celebrate with family and friends. While our family has the big holiday days themselves like Thanksgiving, Christmas and New Years – the season is also filled with lots of other times we end up getting together.
Our town has a Christmas tree lighting ceremony every year, which is a great reason to have people over to the house, as well as fun Christmas planning occasions like cookie-baking and crafting.
For all of these get-togethers one thing is a given – we want to EAT! That’s where easy and quick-to-make, yet delicious, meals come into play. A super convenient thing to do is keep pizza on hand in the freezer so we can always be prepared.
Last week I headed to Walmart to stock up on Red Baron® Thin & Crispy Pizza. Since the boys in our family are cheese lovers and the girls like some toppings, I opted for both Red Baron® Thin & Crispy Supreme Pizza and Red Baron® Thin & Crispy Five Cheese Pizza.
To compliment our pizza, I also created this fun and delicious Italian Salad Roll-Ups recipe. It combines fresh green lettuce with salami, provolone cheese and roasted red peppers for a green salad/antipasto course all in one!
It’s the perfect accompaniment to pizza, pasta, or our Instant Pot Gnocchi recipe!
Italian Salad Roll-Ups Recipe
8 Romaine lettuce leaves
8 thin slices salami
8 thin slices provolone cheese
8 strips roasted red peppers
Balsamic dressing for dipping
Wash and dry the romaine leaves. Remove any thick pieces of spine at the bottom of the leaves. Lay one slice of salami on each leaf. Top with a slice of provolone and then a strip of red pepper. Roll up each leaf and secure with a toothpick. Serve with balsamic dressing (or Italian dressing) for dipping.
Not only are these Italian Salad Roll-Ups a perfect compliment to the Red Baron pizza, but they also feature lots of red and green, making them perfect for the Christmas season! Since they are hand-held, just like the pizza, it makes for an easy meal with no silverware required!

I would not have thought of making an Italian style roll-up. And it is so easy to change up for individual tastes! I would add some marinated artichoke hearts and eggplant to mine and leave out the meat. What a great idea.
