This Instant Pot White Chicken Chili Verde Recipe is quick and easy to make in your Instant Pot or pressure cooker. It’s a perfect easy dinner for busy weeknights!
Do you feel like you are always super busy? I know, right?! There are days, like today, where I have about 32,685 things on my to-do list.
It is hard to prioritize, especially when you have a family, a home and a business to take care of. On days like this, I want my family to have a delicious meal that tastes like it took hours to make, but it didn’t!
On days like this, I rely on my Instant Pot or Slow Cooker to make a yummy meal like Instant Pot gnocchi or spinach artichoke chicken. Don’t you love it when you can prep a few things, throw them in the Pot and let that amazing small appliance do all the work? Me too! And if you have older kids like I do, you can get them to help with some of the small tasks like cutting the veggies.
I am currently obsessed with anything with a little kick to it. My husband loves anything spicy, but I cannot take anything that will burn the roof of my mouth off!
This Instant Pot White Chicken Chili Verde Recipe is a meal we all enjoy. This easy dinner solution has such an amazing flavor and I usually have most of the items in the kitchen.
Instant Pot White Chicken Chili Verde
Ingredients:
- 2 anaheim peppers; de-seeded and ribs removed
- 2 serrano peppers; de-seeded and ribs removed
- 1 white onion; sliced into rounds
- 6 tomatillos; quartered
- 1 bundle cilantro
- 1 tablespoon minced garlic
- 1 – 32oz chicken broth
- 2 boneless, skinless chicken breasts or a rotisserie chicken that is shredded.
- 1 tablespoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 to 4 drops of maggi (optional)
- 1 to 1 1/2 cups water
- 1/2 red onion; diced for garnish
How to Make Instant Pot White Chicken Chili Verde:
Add in chicken, white onion, diced peppers, diced serrano peppers, quartered tomatillos, and garlic into your your instant pot or pressure cooker. Pour in chicken broth and add water to just cover the ingredients. Add cumin, salt, pepper, and maggi.
Set to high pressure and set timer to 20 minutes. Let natural pressure release.
Once the pressure has released. Remove the chicken and immersion blend the soup. If you have a non stick pressure cooker then remove soup to a bowl and blend then add back to the pot.
Shred chicken and add back to the soup. Add a third cup of water to a bowl and 3/4 of the bundle of cilantro. Immersion blend. Pour this into the soup. Use extra cilantro and red onion to garnish.
Instant Pot Chicken Chile Verde
Ingredients

- 1 - 32 oz container chicken broth
- 1 white onion; sliced into rounds
- 2 boneless skinless chicken breasts (read notes to sub with rotisserie chicken)
- 2 boneless skinless chicken thighs
- 1 bundle cilantro
- 6 tomatillos; quartered
- 1 tablespoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 to 4 drops of maggi optional
- 1 to 1 1/2 cups water
- 1/2 red onion; diced for garnish
Instructions
