I love a good creamy dip, but the bad thing is that they are usually loaded with fat – thus the creaminess! I wanted to make a dip for a party recently, but wanted it to be a little lighter. After reading about 25 dip recipes online, I decided to wing it and ended up with this DELICIOUS dip. Everyone who has tried it so far has loved it and it will definitely be a party staple from now on! I have to give a shout-out to Rachael Ray since I drew heavily on her recipe, but definitely made mine a lot lighter than hers!
1 Tbsp butter
1 Tbsp olive oil
2 medium onions
2 cloves garlic, minced
2 beef bouillon cubes
3/4 tsp oregano
2 tsp tamari soy sauce (or Worcestershire sauce)
8 oz light cream cheese, room temperature
8 oz container light sour cream
salt and pepper
Quarter the onions, slice very thinly and then cut slices in half. Heat olive oil and butter in a skillet over medium heat until butter is melted. Add in onions and cook until starting to brown. Add in garlic and cook for a minute. Add in boullion cubes, soy sauce, oregano, 1/3 cup water and a bit of black pepper. Cook for 2-3 minutes. Remove from heat to cool a bit.
In a medium bowl, stir together onion mixture, cream cheese and sour cream. Add salt to season as necessary. Enjoy!
This dip tastes extra-awesome with homemade potato chips from the microwave oven!
