This easy homemade potato chips recipe makes chips that are both delicious and healthy, as well as CRISPY – what a combination! What’s even better is that it is super simple to make these potato chips in the microwave!
I like these homemade chips seasoned with plain ‘ol salt, but you can sprinkle on any kind of seasoning you would like. Try garlic powder, taco seasoning, parmesan cheese, black pepper, ranch dressing mix, etc. I also like to season them with our own copycat Lawry’s seasoning mix.
The chips are best when eaten right after making, but are easy enough to cook up for a quick snack break. I also like them as a compliment to meals – especially sandwiches!
Homemade Healthy Potato Chips in the Microwave Recipe
Ingredients:
Potatoes
Olive Oil
Salt or other Seasoning
Optional: Cooking Spray
How to make potato chips in the microwave:
Start by scrubbing potatoes well. I prefer to make these with the skin on, but you can peel the potatoes if you like. Slice the potatoes as thinly as possible. If you have a mandoline or other slicer, it is a little quicker and you can make the slices more even. I have also used my KitchenAid Slicer Attachment, which works great!
Place potato slices in a bowl and mix with a small amount of olive oil to coat.
Spray a microwave safe dinner plate with cooking spray (if you used a lot of olive oil you can skip this step, but I like to use less oil). Spread the slices out so they aren’t overlapping. If you have any thicker slices, put them on the outer edges. Sprinkle with salt or other seasoning.
Microwave 3-4 minutes (depending on the power of your microwave) – slices should begin to look a little “cooked”. Flip the slices over, but BE CAREFUL they will be very hot! Cook another 4 to 5 minutes or until just slightly golden. The chips will continue to crisp a bit after you take them out of the microwave. Enjoy!

Thank you for this recipe! We love these kind of “italian fries” and tried making them this way with a contraption last year. Unfortunately all it did was burn and ruin the potatoes. Looking forward to trying them this way, and it is way easier. Yum!

Never thought of microwaving chips before, I’ll have to try that for sure since we just recently started eating healthier. I have 40 lbs to lose! You can also bake in the oven but this is much quicker!! I bet it would work with sweet potatoes too.
