What’s your favorite part of game day? For some it’s the game, but for me it’s the food!! There’s nothing better than getting together with family and friends for a few hours of fun while watching the game and eating delicious snacks!
Every year I host a game day party, I try to serve something new. There are a few old standbys that always need to make their way onto the menu due to popular demand, but it’s good to shake things up a bit and try something new.
This year I’m going to freshen things up with Avocados From Mexico and this delicious Chunky Avocado Corn Salsa.
Avocados From Mexico are perfect for game day because they’re healthy, delicious, and so versatile! We like avocados in guacamole, in dips, on sandwiches, in salads – you name it!
For this Chunky Avocado Corn Salsa, I’m adding a little spice and flavor with TABASCO® Sauce. For my recipe I used 1 teaspoon, but you can use as much or as little as you like….. just follow your taste buds!
I like to serve this Chunky Avocado Corn Salsa with yellow tortilla chips, but it’s also great on top of quesadillas. When it comes to the perfect beverage to accompany it, give RITAS a try. Chunky Avocado Corn Salsa
Ingredients:
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
2 limes, juiced
1 teaspoon (or more) TABASCO® Sauce
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon ground cumin
1 (15.25-ounce) can whole kernel corn, drained
2 Avocados From Mexico, cut into ¼″ chunks
4 medium tomatoes, diced
½ cup red onion, small dice
1 medium jalapeño, seeded and minced
(Optional: Fresh chopped cilantro)
How to Make Chunky Avocado Corn Salsa:
In a small bowl, whisk together garlic, olive oil, lime juice, TABASCO® Sauce, salt, pepper and cumin.
In a large bowl, gently mix together corn, avocado, tomatoes, onion and jalapeño.
Pour contents of small bowl over avocado mixture and stir gently to combine.
Chunky Avocado Corn Salsa
