These pretty Spring Butterfly Cupcakes are fun and easy to make starting with a boxed cake mix, white chocolate covered pretzels and M&Ms. They’re perfect for Easter dessert!
Spring is here! Whether you’re having an Easter brunch, a springtime get-together or a classroom party, this cute spring butterfly cupcakes recipe can definitely add a touch of spring and sunshine!
The cake itself is made with a box cake, but feel free to substitute your favorite cupcake recipe.
The only part of the butterfly that is a bit tricky to always find is the edible Easter grass that we use for the antennae. We have links below to find all of the supplies you need.
If necessary you can substitute any thin green candy that you then cut into tiny strips. Green apple licorice is a possibility and so is green Starburst. And if you for some reason can’t find the white chocolate covered pretzels, you can dip your own in white candy melts.

Spring Butterfly Cupcakes Recipe
INGREDIENTS
1 box Cake Mix
3 Eggs
1/2 cup Vegetable Oil
1 cup softened Butter
3 tbsp Milk
4 cup Powdered Sugar
Green Food Coloring
Flipz White Chocolate Covered Pretzels (for wings)
Bunny Mix M&M’s (for body & head)
Edible Easter Grass (for antennae)
How to Make Butterfly Cupcakes:
Bake cupcakes in cupcake tins according to box directions.
Transfer to wire racks to cool.
Cream butter in a medium bowl
Slowly add in the powdered sugar, and milk as needed, until everything is incorporated and frosting is right consistency.
Add several drops of color and whip a few more minutes to get even color.
Roughly ice cupcakes to resemble grass.
Place 4 M&Ms on center of cupcake slightly on edge and overlapping to make head and body.
Cut 2 small pieces of edible easter grass to make antennae.
Place 2 Flipz pretzels to make wings.

what a neat idea! my teenage daughter and I have to try this as we her little cousin has a birthday coming up and I bet she would enjoy these at her party. While we love cake, cupcakes are best for the younger kids and the spring design is very cute as she loves butterflies.

Oh my!! So cute!! Where do you find edible Easter grass? I was thinking that shredded coconut might work, or possibly some of those sour green straws.

You can find it in the cake decorating section of a craft store, from Target.com in the link above (or in some Target stores), but any green candy would work if cut in a small piece.
