I love home fries, especially when they are extra crispy. In my opinion, potatoes are the best part of any meal, including breakfast!
I always find it hard to get home fries nice and crispy when cooking them on top of the stove, especially without using a lot of oil. And I'm not a fan of adding a ton of oil to my cooking.
The solution to crispy home fries that are easy to make and aren't soaked in oil is here! This oven-baked home fries recipe is easy to make and it cooks in the oven while you are preparing the rest of your meal. It's also a good way to add in some veggies with the potatoes!

I have never considered using peppers with a potato dish like that. I would have to make the slices big enough for Boo to pull out, though.

Yum, I love the addition of onions, peppers and garlic to potatoes. It gives it that southwestern charm! I like having them as a breakfast side. I haven’t tried baking to get the extra crisp taste, just stir-frying them in a pan, but this might work just as well and it would require less time at the stove. A flip in between might just be enough to get them the preferable way. Thanks for sharing!

I like mine crispy also. I hate cooking them on the stove because it takes so much oil. Then they just taste like oil. I will have to try your recipe. If I can make them a little healthier then we might have them more often. Thanks!
