This Whole Wheat Oatmeal Breakfast Cookies Recipe is a better choice for an on-the-go breakfast!
Some days don’t you wish you could just act like a kid with no rules and eat cookies for breakfast? With this whole wheat oatmeal breakfast cookies recipe you CAN do that.
Sure, plain shredded wheat or oatmeal might be healthier, but these cookies will beat your average pancake, waffle or bagel any day!
These delicious cookies are made with oatmeal and whole wheat flour with only a minimum of sugar and fats.
The healthier option is to make them with raisins or other dried fruit, but I still like a little dose of dark chocolate in the morning!
(NOTE: These are so yummy you will want to eat them any time of day. They are a great “healthier” alternative for lunchbox snacks.)
Whole Wheat Oatmeal Breakfast Cookies Recipe
Ingredients:
1/4 cup applesauce
2 Tbsp. butter
1/3 cup white sugar
1/2 cup brown sugar
1 egg*
1 tsp. vanilla extract
1 cup whole wheat flour
3/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3/4 cup quick cooking oats
3/4 cup semi-sweet chocolate chips, raisins, or other dried fruit
How to Make Breakfast Cookies:
Preheat oven to 350 degrees.
Beat together applesauce, butter and sugar. Beat in egg and vanilla.
In a separate bowl, stir together flour, baking soda, salt and cinnamon.
Add flour mixture into wet mixture and mix well.
Stir in oats, followed by the chocolate/raisins.
Drop by rounded teaspoons 2 inches apart on a cookie sheet.
Bake 10-12 minutes.
Breakfast Cookie Variations:
Instead of the chocolate chips, you can use raisins or other dried fruit. Or, if you like, you can use both the chocolate chips AND the dried fruit.
How to Make Breakfast Cookies Vegan:
*You can substitute 1 TBSP soy flour for the egg. To make a vegan cookie, replace the butter with 2 Tbsp olive oil or non-dairy butter.

How to Store Breakfast Cookies:
These cookies are always best the first day before they have been stored and still have crispy edges.
BUT, when it comes time to store them, be sure to put in an airtight container. Eat within 4-5 days.
