Chicken, corn and tomatoes combine in a delicious honey chipotle sauce to create a salad that serves as a meal!

When it comes to deciding what to cook for meals the meal that usually stumps me the most is lunch. My best option is when I can figure out things to make that both my husband can take to the office and that I can have working at home.
We have a few favorites and it seems like we seem to repeat those over and over and over again! It gets really boring. Plus, his favorites usually are’t mine and vice versa.
Often it ends up being that I send a sandwich to work with my husband, but when it comes time eat my own lunch at home I’m scrambling to throw something together.
That’s why I’m loving this Chipotle Chicken, Corn and Tomato Salad recipe I put together today. Surprise, surprise it is something that we BOTH found delicious.
Plus making the recipe once makes enough for both of us to have two lunches from it and it stores well in the fridge.
As far as ingredients goes, the lean protein in the Oscar Mayer Selects Natural Slow Roasted Chicken Breast as well as the fresh tomatoes and corn makes it a lunch that fits into a healthful diet.
For dressing on the salad, I used this honey chipotle dressing recipe, but your choice of bottled dressing can be used instead.
And, if you want to swap out the chicken, you can instead use one of the other varieties of Oscar Mayer Selects Natural including Slow Roasted Turkey, Applewood Smoked Turkey, Rotisserie Seasoned Chicken, Applewood Smoked Ham and Slow Roasted Roast Beef.
Chipotle Chicken, Corn and Tomato Salad Recipe
Ingredients:
4 oz. deli sliced chicken or shredded rotisserie chicken
15 oz. can corn, drained
1 cup grape tomatoes, halved
1 tsp. fresh or freeze-dried cilantro
1/2 cup honey chipotle dressing
Directions:
Chop the chicken into small pieces.
In a large bowl, combine chicken, corn, tomatoes, cilantro and dressing.
Stir until dressing is evenly distributed.
Refrigerate at least 30 minutes before serving. Enjoy!
