This delicious Bread Crumb Cookies recipe is an excellent way to use up bread crusts or stale bread crumbs.

I hate wasting food! If there is a way to use up leftovers or the last parts of a can, bottle, jar or box, I want to know about it!
Bread Crumb Cookies are a great way to use up extra bread that has started to go stale. It’s also a great option if your family doesn’t usually eat bread crusts.
As you go through loaves of bread, just save them up in the freezer. Once you have a bunch – – turn them into cookies!
Besides sliced bread, you can also use buns, rolls, or basically anything you have available.
Whether it’s white bread, wheat or multi-grain, it will all taste great once it is turned into cookies.
And while the chocolate chips are totally optional, I always think they make a cookie better!

Bread Crumb Cookies Recipe
INGREDIENTS:
6 slices bread
1 cup flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup butter, softened
1/3 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
3/4 cup chocolate chips
How to make bread crumb cookies:
Preheat oven to 350 degrees.
Toast the bread lightly and then use a food processor or blender to cut into crumbs. Add in the flour, salt and baking powder.
In another large bowl, cream together the butter and sugars. Add in the egg and vanilla.
Add the dry mixture into the wet mixture and mix well. Stir in the chocolate chips
Drop cookies (about a tablespoon each) onto an ungreased baking sheet. Bake 10-12 minutes or until golden brown.

So you say 6 slices of bread. How many cups is that if you already have them pulverized and put in the freezer?

Hi, Laurie. Actually I don’t know for sure! But, I’m thinking it is about 1 1/2 slices. I will measure for sure next time I make them!

I am dumbfounded! This is just wonderful ~ it is such a “duh” moment for me. This would be a great way to sneak some whole wheat into the cookies. My son and hubby don’t mind whole wheat bread, but not pasta or cookies or pizza crust, etc. I will most definitely be making for them and let you know how it goes.
