Bread Crumb Cookies Recipe with Chocolate Chips

These delicious cookies are a delicious way to use up bread crusts or stale bread crumbs.

Ingredients

  • 6 slices bread
  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup butter softened
  • 1/3 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Toast the bread lightly and then use a food processor or blender to cut into crumbs.  Add in the flour, salt and baking powder.
  • In another large bowl, cream together the butter and sugars.   Add in the egg and vanilla.
  • Add the dry mixture into the wet mixture and mix well.  Stir in the chocolate chips
  • Drop cookies (about a tablespoon each) onto an ungreased baking sheet.
  • Bake 10-12 minutes or until golden brown.
