I love a hearty salad that has lots of protein in it to fuel me up, make me feel full and give me energy for the rest of my day. And the more flavorful the better!
That’s what I like about this Apple Cider Chicken Salad Recipe. The chicken has such a delicious flavor thanks for the apple cider vinegar and other seasonings.
The prepared chicken can actually be used for lots more than just this salad. It is great stir fried with veggies, in a fried rice, tossed with pasta or even in a quesadilla for a bit of an Asian/Mexican fusion!
One option is to double the chicken you prepare when creating the Apple Cider Chicken recipe and freeze the extra prepared chicken. That way, the next time you want a salad or other recipe using the chicken, all you need to do is defrost and assemble. That makes for an easy meal!
Apple Cider Chicken Salad Recipe
Ingredients:
1 Chicken Breast (cut in half)
¼ Cup Apple Cider Vinegar
1 Tbsp. Honey
2 Tbsp. Soy Sauce
4 Cloves Garlic (chopped)
1 Medium Red Onion (chopped)
5 Cups Lettuce (cut into bite size pieces)
½ Cup Corn Kernels
4 to 5 Strips of Honey Cured Bacon
2 Tbsp Blue Cheese (crumbled)
2 Tbsp. Olive oil
Pinch of Cayenne Pepper
½ Tsp. Thyme
Salt & Ground Black Pepper (to taste)
½ Cup Chicken Broth
Optional: Salad Dressing of Choice
How to Make Apple Cider Chicken Salad:
1) Wash chicken thoroughly with cold water. Pat dry. Season with salt, ground black pepper, cayenne and ¼ tsp. of thyme. Refrigerate for 30 minutes to 1 hour.
2) In a pan, combine apple cider vinegar, honey, soy sauce, garlic, red onion and chicken broth. Bring to a boil and add seasoned chicken. Cook chicken for 10 to 15 minutes. Let chicken cool for about 10 minutes. Reserve liquid mixture.
3) Pre-heat oven to 350°F.
4) Transfer cooked chicken to a large piece of foil. Drizzle with some of the cooking liquid from the pan. Sprinkle the remaining thyme. Wrap in foil and place in the oven for 10 to 15 minutes. Baste with liquid mixture and continue to cook until no more juice drips as you prick the inner chicken. For the last 10 minutes, open the foil for a crisp chicken skin. Cool for 15 minutes.
5) If your oven is big enough, on a separate pan, lay bacon pieces and cook for 5 to 7 minutes as the chicken cooks on another sheet. Allow bacon to cool then cut into pieces.
6) Arrange lettuce, top with bite size pieces of bacon and roasted chicken cut to your desired size (lengthwise/cubes).
7) Add corn kernel, crumbled blue cheese and drizzle with your favorite dressing. Serve and enjoy!
