Recipe: Easy and Delicious Baked Apples from the Microwave

With the approach of Fall, it means yummy apples are coming in to season.  This easy recipe is so quick and easy to make and simply delicious!  It’s best made with a slightly tart apple like Fuji, Gala or Honeycrisp.  You could also try a more tart apple like Granny Smith or other apples that might be a specialty in your region of the country.

To start, remove the core using an apple corer or paring knife.  Peel away about 1/2″ of the top of the apple peel.

In a small bowl, mix together the filling:

1 tsp raisins
1 Tbsp brown sugar
1 tsp butter

Pack filling into the center of the apple and then sprinkle the apple with cinnamon.

Place apple in a microwave-safe bowl. Pour 1/2 cup water gently into the bowl. Cover bowl with a lid or plastic wrap, leaving a little space or steam to escape. Microwave on high for 5 minutes or until apple is soft. Place apple on a clean bowl or plate and spoon some of the cooking juices over the top. Serve warm.
