This sloppy joe recipe is super yummy and, thanks to bulgur wheat, only uses half the amount of meat as a regular recipe which makes it a lot cheaper and also more healthy.

I have mentioned before that using bulgur wheat is an economical and healthy way to stretch your ground beef. (See this previous post for details.)
This sloppy joe recipe is super yummy and lets you stretch your ground beef as it only uses half the amount of meat as a regular recipe which makes it a lot cheaper and also more healthy.
My husband has admitted to me that he likes these sloppy joes even better than the “regular” ones, so they are a keeper at our house!
Bob’s Red Mill Red Bulgur / Hard Wheat
Stretch Your Beef Sloppy Joes Recipe
Ingredients:
1 pound lean ground beef
3/4 cup bulgur wheat
1 1/2 cups water
1/2 tsp salt
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 teaspoon garlic powder
2 teaspoon bottled yellow mustard
1 1/2 cup ketchup
2 Tbsp brown sugar
salt and pepper to taste
How to make sloppy joes with bulgur wheat:
In a medium-sized saucepan, bring water to a boil with 1/2 tsp salt. Stir in the bulgur, reduce heat, cover and simmer for 15 minutes or until all the water is absorbed.
In a large frying pan, brown beef with pepper and onions. Drain liquid. Add in remaining ingredients. Stir thoroughly and cook over medium heat 15-20 minutes or until cooked through.
Serve on buns or your favorite bread.
OPTIONAL: I like to put a little of the mixture on the bun, sprinkle on some shredded cheese, and then add more sloppy joe mixture on top so it melts.
How to Make Bulgur Wheat Sloppy Joes using Manwich:
While I think the recipe above is super easy as it is, you can also make shortcut sloppy joes with bulgur wheat using a can of Manwich. To do that, first prepare the bulgur wheat as instructed in the first line of the directions above.
After that brown ground beef as directed on the Manwich can. Then when adding in the Manwich to the beef, also add in your cooked bulgur wheat.
