This yummy omelet has a Greek flair with the addition of feta cheese and spinach. It’s a brunch favorite around here! This Greek Omelet recipe makes two omelets.

Omelettes are one of my favorite foods for breakfast or brunch. There is so much versatility available just because you can fill them with whatever you like!
For this recipe we went with some Greek inspiration with the bold flavor of Feta cheese. We get the brightness of fresh spinach, delicious taste of red pepper and then some good gooey cheesiness from mozzarella.
This omelette is also packed with “good for you foods” like eggs and vegetables – especially that spinach! Spinach is very nutrient rich and on the list as one of the best foods to eat while pregnant.
We LOVE to use spinach in breakfast recipes like our spinach chocolate chip muffins or in a spinach quiche.
Of course you can play around a bit with these additions, but we love ours exactly like this! Read on to see how we make this Spinach and Feta Omelette!
Greek Omelette Recipe with Spinach, Peppers and Feta
Ingredients:
4 eggs
1 tablespoon milk
1 teaspoon olive oil
½ cup of roasted peppers and onions (see recipe through link)
(or you can use jarred peppers and sauteed onions)
½ cup spinach leaves, lightly chopped
2 tablespoon feta cheese, crumbled
⅓ cup shredded mozzarella cheese
salt and pepper
How to make a Greek Omelet:
Whisk the eggs together with the milk and olive oil. Grease a small frying/omelet pan.
Add half of egg mixture to pan.
Cook 2-3 minutes or until egg starts to set.
Flip to other side.
Put half of all remaining ingredients on top and sprinkle with salt and pepper.
Fold omelet in half and move to serving plate.
Repeat with the other half of the ingredients to make the second omelet.
Enjoy!

I would probably make this for a weeknight dinner it looks so delicious! I love incorporating spinach into my meals but not so heavily that it overpowers the taste. I prefer my spinach raw rather than cooked, but this doesn’t have too much. I hope my omelet looks as good as yours when I finish! Thank you for sharing this wonderful recipe!
