Sometimes I feel like it’s just not the weekend unless we have a nice yummy egg dish. The great thing about eggs is that they’re super versatile and can be cooked up in a hurry.
This Sausage, Veggie and Egg Scramble Recipe is tasty, easy to prepare, and can get your day started with a bunch of veggies along with that protein.
Feel free to get creative and change out bacon for sausage or add in other veggies.
Oh, and I forgot to mention that this scramble is a keto friendly recipe too!
Easy Sausage, Veggie and Egg Scramble Recipe
Ingredients:
6 breakfast sausage links
6 eggs
1 tbsp olive oil
1/4 cup chopped bell peppers (I like red, yellow and green)
1/4 cup chopped onion
1/2 cup spinach, cut/torn in small pieces
1/4 cup shredded cheese, any type
salt and pepper
How to make a sausage, veggie and egg scramble:
Cook sausage according to package directions and then cut into small pieces.
Beat eggs in a small dish.
Heat olive oil over medium heat.
Add in peppers, onions and sausage.
Cook until starting to brown.
Add in eggs and stir until eggs are almost fully cooked through.
Toss in the cheese and spinach.
Stir until cheese is melted and spinach is wilted.
Season with salt and pepper. Enjoy!

Honestly I would love to have this for dinner with some crispy, sour dough bread. It would be just the light”ish” but filling meal we like when we have our late dinners.
