Easy Sausage, Veggie and Egg Scramble Recipe
Ingredients:
6 breakfast sausage links
6 eggs
1 tbsp olive oil
1/4 cup chopped bell peppers (I like red, yellow and green)
1/4 cup chopped onion
1/2 cup spinach, cut/torn in small pieces
1/4 cup shredded cheese, any type
salt and pepper
How to make a sausage, veggie and egg scramble:
Cook sausage according to package directions and then cut into small pieces. Beat eggs in a small dish. Heat olive oil over medium heat. Add in peppers, onions and sausage. Cook until starting to brown. Add in eggs and stir until eggs are almost fully cooked through. Toss in the cheese and spinach. Stir until cheese is melted and spinach is wilted. Season with salt and pepper. Enjoy!

Honestly I would love to have this for dinner with some crispy, sour dough bread. It would be just the light”ish” but filling meal we like when we have our late dinners. Seems like we tend to eat later in the summer and fall for some reason. Great recipe ~ thank you for sharing! PS: I will add some mushrooms and a side of salsa!
