- 6 breakfast sausage links
- 6 eggs
- 1 tablespoon olive oil
- ¼ cup chopped bell peppers I like red, yellow and green
- ¼ cup chopped onion
- ½ cup spinach cut/torn in small pieces
- ¼ cup shredded cheese any type
- salt and pepper
Cook sausage according to package directions and then cut into small pieces.
Beat eggs in a small dish.
Heat olive oil over medium heat. Add in peppers, onions and sausage. Cook until starting to brown.
Add in eggs and stir until eggs are almost fully cooked through.
Toss in the cheese and spinach. Stir until cheese is melted and spinach is wilted.
Season with salt and pepper.
