Ingredients

  • 6 breakfast sausage links
  • 6 eggs
  • 1 tablespoon olive oil
  • ¼ cup chopped bell peppers I like red, yellow and green
  • ¼ cup chopped onion
  • ½ cup spinach cut/torn in small pieces
  • ¼ cup shredded cheese any type
  • salt and pepper

Instructions

  • Cook sausage according to package directions and then cut into small pieces.
  • Beat eggs in a small dish.
  • Heat olive oil over medium heat. Add in peppers, onions and sausage. Cook until starting to brown.
  • Add in eggs and stir until eggs are almost fully cooked through.
  • Toss in the cheese and spinach. Stir until cheese is melted and spinach is wilted.
  • Season with salt and pepper.
