I live in the south, so we only get a handful of weeks of cold weather. Otherwise, we can wear shorts most of the year!
One of my favorite things about the warm weather is that we can fire up the grill and cook out.
My husband is a master at the grill! It is nice to have him take over the cooking for the family. This gives me time to prep the rest of the meal. In the end, it allows us both more time to spend with the kids.

Easy Loaded Grilled Pork Nachos
Ingredients:
Smithfield Marinated Fresh Pork product of your choice
One bag of tortilla chips
2 cups shredded cheese of your choice
1 jalapeno pepper, sliced
1/2 cup mini sweet peppers, sliced
1/2 cup canned sweet corn
1/2 cup canned black beans
Salsa, shredded lettuce and sour cream if desired
How to Make Pork Nachos:
Grill your Smithfield Marinated Fresh Pork until done, approximately 20 minutes. Allow to rest 10 minutes before slicing.
Preheat oven to 400 degrees.
In a cast iron skillet, or sheet pan, layer tortilla chips, pork, beans, corn, cheese and peppers.
Bake until cheese is melted (approximately 10 mins)
Top with salsa, lettuce and sour cream as desired.
If you end up with more pork roast than fits on your nachos, you can use the leftovers to make pulled pork soup!
Loaded Grilled Pork Nachos
Ingredients
- 1.5 pound Smithfield Marinated Fresh Pork loin
- 1 bag tortilla chips
- 2 cups shredded cheese of your choice
- 1 jalapeno pepper sliced
- 1/2 cup mini sweet peppers sliced
- 1/2 cup canned sweet corn
- 1/2 cup canned black beans
- Salsa shredded lettuce and sour cream if desired
Instructions
- Grill your Smithfield Marinated Fresh Pork until done, approximately 20 minutes. Allow to rest 10 minutes before slicing.
- Preheat oven to 400 degrees.
- In a cast iron skillet, or sheet pan, layer tortilla chips, pork, beans, corn, cheese and peppers.
