On hot summer days, it’s nice to beat the heat with a salad made of refreshing ingredients.
When you think of refreshing, two things near the top of the list are cucumbers (where do you think we get the phrase “cool as a cucumber”??) and honeydew melon.
The cool combination of these two summer favorites, makes this Cucumber Honeydew Salad Recipe extra refreshing!
Be sure to chill this Cucumber Honeydew Salad recipe and keep it nice and cool. If serving at an outdoor event, you can do this by setting your salad bowl in another bowl that is a bit larger and filled with ice. It’s easy to do and easy to serve.

Cucumber Honeydew Salad Recipe
INGREDIENTS:
1 Cucumber
1 Honeydew Melon
1/2 Red Onion
2 tbsp chopped Fresh Dill
Dressing:
2 tbsp Lemon Juice
1/4 cup Olive Oil
1 tsp Honey
Salt and Pepper to taste
How to Make Cucumber Honeydew Salad:
Whisk together dressing ingredients until blended. Set aside.
Cut cucumber into chunks and add to bowl.
Cut melon. Remove seeds and rind and cut into chunks, Add to bowl.
Dice red onion and add to bowl.
Add dill and dressing and toss to mix.
Cucumber and Honeydew Salad Substitution Options:
Don’t have honeydew melon available? You can also make the salad with cantaloupe. If you find the taste of red onion too strong, you can substitute with a sweeter Vidalia onion. This recipe is also good with different flavors of honey. You can experiment to find your favorite!
Serving Cucumber Honeydew Salad as a Main Dish:
If you would like to turn this Cucumber and Honeydew salad into a main dish, I recommend adding some thin slices of prosciutto (or else another smoked ham) to round out the dish. Another option is adding either fresh mozzarella or feta cheese to the salad. They’re both delicious, with the feta adding a stronger flavor.
