Slow cooker layered bean burritos are a delicious, hearty and budget friendly meal that’s easy to put together and even easier to cook because the Crockpot does the work!
During these long cold winter months, it seems like the Crockpot is more popular than ever. I have been using mine a lot this year and also experimenting with adapting family favorites into Crockpot meals.

Dollar General has so many kitchen staples available on their shelves with their Clover Valley brand – most of them at prices lower than national brands. This makes Dollar General easy meals both quick, easy AND affordable!
I was able to get everything I needed at Dollar General to create this Crockpot Layered Bean Burritos recipe along with a side dish of Spanish rice for just over $10. I even had extra ingredients left over.
You can use flour tortillas from the store, or make the dish extra delicious with homemade by using our easy flour tortilla recipe!
You might want to consider using a slow cooker liner for this dish. We all know how hard it can be to clean up after anything made with cheese! You can find them here. Once you are done cooking and serving, just pull the liner of the pot and throw away. You’ll be left with a totally clean slow cooker with nothing to wash!
So, let’s get on to the recipe!
Crockpot Layered Bean Burritos Recipe
Prep Time: 15 minutes
Total Time: 3 hours, 50 minutes
Ingredients:
1 tsp Chili Powder
1 tsp Garlic Powder
2 tsp Minced Onion
1 15 oz. can Pinto Beans
1 15 oz. can Tomato Sauce
1 15 oz. can Diced Tomatoes with Green Chilies
1 can Refried Beans
8 oz. Shredded Mild Cheddar Cheese
5 large flour tortillas
How to make slow cooker burritos:
Spray sides of Crockpot with cooking spray or use a Crockpot liner.
Mix together chili powder, garlic powder, onion, pinto beans, tomato sauce and diced tomatoes in a medium sized bowl.
Place 3/4 cup tomato mixture in bottom of Crockpot. Spread refried beans onto a tortilla.
Place tortilla in Crockpot. Sprinkle with 1/3 cup shredded cheese. Spread 3/4 cup tomato mixture on top. Continue the process, alternating tortillas, cheese and tomato mixture until you end with cheese on the top.
Cook on low for 3 1/2 hours.
To serve, we added Clover Valley Spanish Rice – just heat in the microwave and serve.

- 2 tsp Clover Valley Minced Onion
- 1 15 oz. can Clover Valley Pinto Beans

Instructions

I am definitely going to try this recipe! I am about 99 % vegetarian, and one of my main sources of protein is beans. I also like the other ingredients in this recipe, and it sounds so easy to make. It sounds delicious.

I have a thing about off brands sometimes they really dull compared to name brands. Your choice of items doesn’t seem like it could go wrong but how would you rate the quality over other brands you’ve tried?

I hadn’t tried the Clover Valley line below and was pleasantly surprised, especially by the refried beans. I used more of it later just spread on a tortilla, sprinkled with cheese and stuck in the toaster oven and it was really good!
