Vegan Carrot Cake
Carrot cake is one of my favorites – it’s moist with creamy frosting on top, what could be better than that? Nothing!
You can make carrot cake all year around but during fall and winter, it’s the best time to whip up this dessert. Why? Colder months are the season for root vegetables and you can find them fresh, ergo they taste better.
Even if you are on the vegan diet, don’t avoid carrot cake! I especially created this easy and yummy vegan carrot cake recipe for you. Indulge away 🙂

With one bowl and a tablespoon, making carrot cake is a no brainer. Get started now!
To substitute the eggs I used applesauce. While I do make my own homemade applesauce, and the recipe is on my blog, it’s fine to use store-bought as well. The reason I prefer to make my own is because I love to know what my applesauce contains and I also make it without sugar.
The frosting for the cake is just simply powdered sugar and boiling water frosting, you can control the thickness by adding more or less water. Make sure that you don’t skip the frosting, it’s what makes the cake extra yummy!
The recipe yields 1 loaf, although you can double the ingredients for a bigger cake.

Vegan Carrot Cake Recipe
Ingredients:
2 peeled and grated carrots
1/2 cup applesauce
70 grams / 1/3 cup demerara sugar
1/2 cup vegetable oil
1 teaspoon cinnamon
1 cup flour
1 tablespoon baking powder
For frosting:
1 cup powdered sugar
2-3 tablespoons boiling water (add more or less to get the thickness you prefer for the glaze)
How to make vegan carrot cake:
- Heat the oven to 180°C / 350°F degrees.
- In a bowl, mix sugar, carrots, and applesauce.
- Add cinnamon and oil. Mix well.
- Add the flour and baking powder. Mix well.
- Pour the batter into a greased loaf pan.
- Bake for 40 minutes.
- In a small bowl, put the powdered sugar and add 1 tablespoon of boiling water.
- Whisk well and add another tablespoon of boiling water. (Only if it’s not turning into a shiny glaze should you add another tablespoon of boiling water and continue to whisk until the batter is smooth and has no lumps.)
- Cool the cake at room temperature.
- Pour the glaze on the cake.
- Cut yourself a piece and enjoy!
