My kitchen adventures finally took root when I moved out of my parent's house and learned that I had to cook in order to eat! It took me time to become a master chef and baker and I can definitely say that cooking/baking is a huge passion of mine. Instagram and Pinterest inspire me to whip up new recipes and other food bloggers also help me track down new recipes or even just improve the classics.
Typically, I cook light meals that are vegetarian and vegan as I try to live a healthy lifestyle. However, I also bake decadent cakes and cookies for balance 😉 Although my family and friends would say that I have a knack for creating sweet treats.
I love to be in the kitchen and I also have a passion for food photography, which is why I take my very own creative shots for everything I post on my blog. While my blog is a hobby that I thoroughly enjoy, my day job is as a web developer. Both are a perfect combination that keep me loving life!
Vegan Carrot Cake
Carrot cake is one of my favorites – it's moist with creamy frosting on top, what could be better than that? Nothing!
You can make carrot cake all year around but during fall and winter, it's the best time to whip up this dessert. Why? Colder months are the season for root vegetables and you can find them fresh, ergo they taste better.
Even if you are on the vegan diet, don't avoid carrot cake! I especially created this easy and yummy vegan carrot cake recipe for you. Indulge away 🙂
If you are considering starting the vegan diet, I have many vegan recipes to offer right here.
With one bowl and a tablespoon, making carrot cake is a no brainer. Get started now!
To substitute the eggs I used applesauce. While I do make my own homemade applesauce, and the recipe is on my blog, it's fine to use store-bought as well. The reason I prefer to make my own is because I love to know what my applesauce contains and I also make it without sugar.
The frosting for the cake is just simply powdered sugar and boiling water frosting, you can control the thickness by adding more or less water. Make sure that you don't skip the frosting, it's what makes the cake extra yummy!
The recipe yields 1 loaf, although you can double the ingredients for a bigger cake.
I hope you will enjoy this easy and yummy vegan carrot cake, here is the recipe:

How to make vegan carrot cake:

- In a bowl, mix sugar, carrots, and applesauce.
- Add cinnamon and oil. Mix well.
- Add the flour and baking powder. Mix well.
- Pour the batter into a greased loaf pan.
