I love cooking Mexican food and I also love a quick and easy dinner. Sometimes the easiest way to get dinner on the table in a hurry is with a little help – like in this Slow Cooker Chicken Fajitas recipe using Old El Paso Products.

I recently received some of their favorites to try out and incorporate into an easy dinner. During late summer we can find lots of awesome veggies at the Farmers Market and these are perfect for adding into favorite Mexican dishes.
One of my favorite things in the summer is the variety of fresh bell peppers – green, red, yellow – you name it!
To make cooking even easier, I like to rely on my slow cooker, which is how I decided to make my Old El Paso Fajitas.
While we used an Old El Paso Fajitas Kit, you can just get a packet of Old El Paso Seasoning Mix and use your own favorite flour tortillas.
Slow Cooker Chicken Fajitas
Ingredients:
3 boneless chicken breasts
1 Old El Paso Chicken Fajitas Kit
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced

How to make slow cooker chicken fajitas:
Place chicken, peppers, garlic and onion in the slow cooker.
Sprinkle with the fajita seasoning mix from the kit and top with the fajita sauce.
Cook all on low for 5-6 hours or high for 3-4 hours.
Serve on flour tortillas included in the kit.
