Raisin Bran Muffins Recipe – Great for Breakfast on the GO!

Raisin Bran makes an easy healthy breakfast, but it’s not exactly portable.  You can take your raisin bran “to go” in these muffins, although we like to eat them around the house too!  They’re low in fat since they use no butter or oil.  The moisture comes from applesauce and the recipe calls for only one egg.

3/4 cup whole wheat flour
3/4 cup all-purpose flour
2/3 cup firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp nutmeg
1/2 tsp all-spice
1/4 tsp. salt
1 egg
1-1/3 cups skim milk
1/4 cup applesauce
3 cups raisin bran

Preheat oven to 400°F. Mix all dry ingredients except the cereal in a large bowl. Whisk the egg in a small bowl and then add in the milk and applesauce. Add wet ingredients to flour mixture and stir well.  Mix in cereal. Spoon batterinto greased muffin pans.

Bake for 18 – 22 minutes or until lightly browned. Makes 12 muffins.
