Take your breakfast cereal on the go with these yummy muffins made with Raisin Bran. You can make this easy recipe from scratch in under 30 minutes.
Raisin Bran makes an easy healthy breakfast, but it’s not exactly portable. You can take your raisin bran “to go” in these muffins, although we like to eat them around the house too!
These muffins are low in fat since they use no butter or oil. The moisture comes from applesauce and the recipe calls for only one egg.
These cereal muffins are also great for your budget! If you have raisin bran that has gotten too stale to taste good in a bowl with milk, it will still be great in your muffins.
If you’re starting with a new box of raisin bran to make your muffins you can grab the store brand or whatever is the least expensive. It all tastes delicious once it’s made into muffins.
You can pack a muffin or two in your bag to eat breakfast on the run. If you’re eating them at home I also love to heat them in the toaster oven to get them warm with a bit of crisp to the edges. Let’s get on to the recipe!
Raisin Bran Muffins Recipe
Ingredients:
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2/3 cup firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp nutmeg
1/2 tsp all-spice
1/4 tsp. salt
1 egg
1-1/3 cups skim milk
1/4 cup applesauce
3 cups raisin bran
How to make Raisin Bran muffins:
Preheat oven to 400°F.
Mix all dry ingredients except the cereal in a large bowl.
Whisk the egg in a small bowl and then add in the milk and applesauce.
Add wet ingredients to flour mixture and stir well.
Mix in cereal.
Spoon batter into greased muffin pan.
Bake for 18 – 22 minutes or until lightly browned. Makes 12 muffins.

Often, our Jar Of Applesauce goes bad before I had a chance to use it so this is a great idea. Plus we didn’t get the best box of Raisin Brans and I’m not going to toss it. This looks like a great recipe

Ok this recipe turned out way better than a different recipe. The down fall is the temp. 400 degrees cooks too fast for muffins. Needs to be on 350. 2nd- is for more moist muffin , a pan of water under neath muffin pan adds moisture. I tried this on this recipe. Add baking powder to it along with soda. Great muffin
