Raisin Bran makes an easy healthy breakfast, but it's not exactly portable. You can take your raisin bran “to go” in these muffins, although we like to eat them around the house too!
These muffins are low in fat since they use no butter or oil. The moisture comes from applesauce and the recipe calls for only one egg.
You can pack a muffin or two in your bag to eat breakfast on the run. If you're eating them at home I also love to heat them in the toaster oven to get them warm with a bit of crisp to the edges. Let's get on to the recipe!
Raisin Bran Muffins Recipe
Ingredients:
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2/3 cup firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp nutmeg
1/2 tsp all-spice
1/4 tsp. salt
1 egg
1-1/3 cups skim milk
1/4 cup applesauce
3 cups raisin bran
How to make Raisin Bran muffins:
Preheat oven to 400°F.
Mix all dry ingredients except the cereal in a large bowl.
Whisk the egg in a small bowl and then add in the milk and applesauce.
Add wet ingredients to flour mixture and stir well.
Mix in cereal.
Spoon batter into greased muffin pan.
Bake for 18 – 22 minutes or until lightly browned. Makes 12 muffins.
