Roasted Red Pepper Hummus

Ingredients

  • 2 roasted red bell peppers - if using jar peppers ¾ cup
  • 1 can chickpeas/garbanzo beans drained
  • ¼ cup tahini
  • 1 tablespoon minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • ¼ cup lemon juice
  • 2 tablespoons feta cheese crumbled
  • Salt & Pepper to taste

Instructions

  • In a food processor combine the tahini, lemon juice, olive oil, garlic, and cumin - blend until smooth.
  • Add in chickpeas, bell pepper, and feta - blend again until smooth.
  • Stir in salt and pepper to taste.
  • Spoon into serving dish and top with chopped roasted bell pepper and a drizzle of olive oil.
  • Serve with pita bread and fresh veggies & enjoy!
