Sheet Pan Quesadillas

Ingredients

  • 1 lb ground beef
  • 1 green pepper
  • 1 white onion
  • 7 tortillas
  • 1 packet taco seasoning
  • 1/4 cup water
  • Mexican blend shredded cheese

Instructions

  • Turn on the oven and preheat to 425 degrees.
  • Saute the onions and peppers in olive oil in frying pan until softened and set aside.
  • Put the meat in pan and cook until browned. Drain off grease. 
  • Add the meat back into the pan and then add the taco seasoning and cook to package directions. 
  • Put the tortillas on a baking sheet. Make sure that they're overlapping.
  • Layer the tortillas with veggies, cheese, and meat. 
  • Fold the tortillas and put one in the center to close them all together. 
  • Put another baking pan on top as this helps to hold in the help and crisp up the top. 
  • Put in the oven and bake for 25-30 minutes. 

Notes

You can finish off your quesadilla with any of these optional toppings:
  • sour cream
  • guacamole
  • salsa
  • green onions
  • shredded lettuce
  • diced tomatoes
  • diced onions
