Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 2/3 cup firmly packed brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp all-spice
  • 1/4 tsp. salt
  • 1 egg
  • 1-1/3 cups skim milk
  • 1/4 cup applesauce
  • 3 cups raisin bran

Instructions

  • Preheat oven to 400°F.
  • Mix all dry ingredients except the cereal in a large bowl.
  • Whisk the egg in a small bowl and then add in the milk and applesauce. Add wet ingredients to flour mixture and stir well. 
  • Mix in cereal.
  • Spoon batterinto greased muffin pans.
  • Bake for 18 – 22 minutes or until lightly browned.
